Onirique V.2024 3 bottle Horizontal
A three (3) bottle horizontal to sample each of our offerings. Included are a bottle each of our 2024 cuvées: Summer’s crop of Gravenstein, the fall’s bounty of Récolte Automnale, and winter’s chilly trove of Récolte Hivernale.
Our Gravenstein Cider is crafted to be a pure expression of the apple, and the freshness for which they are known for. Fruit forward and succulent, this cider is our most pleasing. Apples picked in the last days of August, then keeved in the traditional Norman “chapeau brun” style. Slowly fermented over four months in stainless steel barrels then bottled demi-sec.
Récolte Automnale blends some of the most revered apples planted in abundance in the area; Jonathan, Golden Delicious and Rhode Island Greening, with more elusive cider cultivars including Nehou, Potters Perfection, Amere de Berthcourt, and Kingston Black. Locally foraged crab apples round out the blend. Bone-dry and structured, with a lively tension and fleshy concentration.
Récolte Hivernale is a collection of late season varieties: Newton Pippin, Rome Beauty, Arkansas Black, mixed English bitters like Yarlington Mill and Dabinett, along with a touch of various pears foraged locally. This cider has a delicate viscosity and roundness, superb balance, and immense richness.
